Omi’s Macaroni and Cheese

It’s expected, almost demanded, from our family for Omi to bring her famous Mac & Cheese to a family function.   It’s so decadent, and she just has the magic touch with it!   You low carb-ers,  clean eaters may not love this the way we do,  so you will just have to take our word for it!  Fair warning, once you bring this to a get together, you will be asked to bring it forever!



You will need:


1 16 oz elbow macaroni

1 stick of butter

1 can cheddar cheese soup

1 16 oz package shredded cheddar cheese or a cheddar cheese blend ( Omi likes the blend)

1 5 oz can of evaporated milk

1 beaten egg

2 cups half & half

Salt and pepper to taste

Paprika


Boil pasta in salted water until al-dente.  Drain and add to large mixing bowl.  Salt and pepper to taste.   Add butter, stir until melted.  Stir in 1/2 of the shredded cheese, mix well then add egg.  Next stir in evaporated milk.  Whisk soup with half & half until smooth, stir into pasta.   

Pour into casserole dish or crock pot.   Top with remaining cheddar cheese, garnish with paprika.


If using casserole dish, bake at 350 for 45-60 minutes.

If using crock pot, cook on low for 2.5-3 hours.
