Ricks Killer BBQ Chicken

My husband is the king on the grill, both gas and charcoal. I love his BBQ leg quarters. A leg quarter is the thigh and leg together. They are meatier and hold in the juices much more than if separate. He does start them in the oven and finishes on the grill. You want the final internal temperature to be 175 degrees. He puts a rub on them and lets them sit in a large ziplock gallon bag for a few hours before he bakes them.


You will need:

4 chicken leg quarters

1/2 cup BBQ rub of choice ( we use 3 Beer BBQ Rub)

1/2 cup brown sugar

Kraft regular BBQ sauce


Mix the rub then massage all over the chicken. Place ziplock bag or tray covered in fridge for 3 hours. Before baking let sit out for 15 minutes or so before placing in oven. Oven temp should 350, bake for an hour. Finish on a hot grill, basting with the BBQ sauce for about 15 minutes, turning half way, until you get a good sear on both sides. Now you may wonder why we use such basic BBQ sauce, and thats because the rub provides such a good flavor that the sauce just compliments it.
