Chicken Pastina Soup

I love soup, and I crave soup. There is nothing in a can that will ever satisfy my craving so I make my own, and it’s worth the wait. One of my favorites is chicken and pastina soup. I make this for people when they don’t feel well, and for me just when I want soup! What is pastina? Its simply tiny pasta, in the Italian world is known as comfort food, whether in a soup, or just made with milk, butter and Parmesan cheese.


You will need:

2 small boneless chicken breasts

2 cups chicken bone broth

2 cups water

1 carrot sliced thin

1/2 of a small sweet onion minced

4 garlic cloves rough chopped

1/3 bag pastina

Salt and pepper to taste

Grated pecorino

Olive oil


In a stock pot, add water, bone broth and chicken breasts and cook covered on a low simmer for an hour. Remove chicken to a bowl, then add salt and pepper and veggies to the broth. Simmer for another half hour then add the pastina. I like the pastina done in this recipe so cook for the whole 5 minutes. Shred the chicken, add to the soup and warm through.

Ladle into a bowl, drizzle with a little olive oil, top with fresh cracked pepper and some grated cheese.
