Creamy Mediterranean Chicken Pasta

With party season upon us, I try to eat healthy in between the cookie exchanges and holiday events. I found some amazing healthy pasta at Lidl. It’s an organic whole wheat pasta that they carry regularly. This whole recipe is not only good for you, but is packed with flavor. This will make 2 large servings.


You will need:

Olive oil

Pinch of red pepper flakes

3 garlic cloves minced

2 cups cherry tomatoes

2 cups shredded chicken breast

1/3 cup white wine

1 cup crumbled feta cheese ( buy a whole block and break up)

Handful of fresh spinach

2 tbsp fat free 1/2 & 1/2

1/3 box of whole wheat pasta

Fresh cracked black pepper


Heat olive oil in a large pan, add garlic and cook until light brown. Toss in cherry tomatoes and red pepper flakes. Turn down to simmer, and cook tomatoes until you can smash them down. Add wine and continue to simmer for 10 minutes. Add chicken and stir. Cook pasta al dente about 6 minutes. Using tongs to remove cooked pasta from water and add into chicken mixture, then add feta and spinach. Stir well, then add 1 -2 ladles of pasta water. Stir until completely blended and spinach has wilted just a little. Lastly add 1/2 & 1/2 and stir until blended.

Serve in pasta bowls with some fresh cracked black pepper.
