Gnocchi Bisque

There are days where I want something hearty to eat, but don’t have a ton of time. I whipped this up for lunch in minutes and have some left over another lunch (or to share). I find imported gnocchi in the gourmet section of Home Goods but you can often find in the grocery store.


You will need:

1/2 1 lb Package of gnocchi

19 oz canof Progresso Tomato Basil soup

1 tbsp olive oil

1 large tomato, seeded and chopped

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

Chopped basil

Grated pecorino romano

Shredded mozzarella


Cook half the package of gnocchi according to directions. Freeze the other half, they freeze great! Set aside.

Heat olive oil and add tomatoes. Cook for 10 minutes lightly smashing. Add can of soup, garlic powder, salt and pepper. Stir and let simmer for 10 minutes. Add cooked gnocchi and simmer another 5 minutes.

Ladle into bowl, top with basil and cheeses.

Lunch in under 30 minutes. Filling, comforting and yummy!!
