Turkey Meatloaf

I use turkey instead of ground beef in many recipes. If you master the flavor base, this beef substitute will taste amazing. Turkey is lower in saturated fat than ground beef, and is better for heart health. However, unlike beef, turkey needs to be thoroughly cooked.

You will need:

Sauce~

1/2 cup ketchup

1 tbsp mustard

1 tsp honey

1 tsp garlic powder

1 tsp Worcestershire sauce

Meatloaf~

Olive oil

1 carrot

1 celery stalk

2 garlic cloves

1/2 onion

1 egg

1 lb ground turkey

1 cup panko breadcrumbs

Salt and pepper

Preheat oven to 350.

Finely chop the carrot, celery, onion and garlic ( I use a mini chopper). Coat bottom of pan with oil, add chopped vegetables and sauté until soft. Turn off heat and let them cool down.

Mix all the sauce ingredients and set aside.

In a large mixing bowl, add egg, breadcrumbs, salt and pepper, soft vegetables including the oil you cooked them in, and mix until blended. Shape into an oval and place in a well greased (use a spray oil) baking pan. Brush the sauce on top of the meatloaf. Bake for 50 minutes, remove from oven, lightly tent with foil and let it sit for 10 minutes before slicing.

Serve with the extra sauce on the side.
