A Ricotta Glow Up ✨


I’m still super obsessed with my recent discovery of homemade ricotta. It’s creamy, dreamy, and honestly……kind of life-changing. But let’s be real: it takes time, patience, and a bit of finesse to pull off. And sometimes you just want the ricotta without the ritual.

Good news: I’ve cracked the code.

Here’s my shortcut for transforming basic store-bought ricotta into something that tastes like you spent the afternoon channeling your inner Italian nonna. No one has to know. 🤐


1. Drain the excess moisture- Often store-bought ricottas can be watery or gritty—not exactly what we want. The fix? Line a fine-mesh strainer with cheesecloth (or a clean kitchen towel), spoon in your ricotta, and let it drain over a bowl in the fridge for a few hours—or overnight if you’ve got the time. The result is a thicker, more luscious texture.

2. Whip it good-Take that drained ricotta and pop it into a food processor, stand mixer, or use a hand blender. Whipping it breaks up any graininess and fluffs it into a smooth, airy spread.

3. Add some creaminess-To take it over the top, add just a touch of fat to help it blend and become silky-smooth. Try one of these:

  • A splash of heavy cream

  • A drizzle of good olive oil

  • A bit of reserved whey from the draining step

Start small—you can always add more.

4. Season + flavor-Here is where it gets fun. Customize your whipped ricotta depending on what you’re using it for. Start with a pinch of salt (non-negotiable), and then play:

  • Lemon zest for brightness

  • Fresh or dried herbs like basil, thyme, or chives

  • Honey or maple syrup for a sweet version

  • Garlic powder or chili flakes for a savory kick
