Coastal Blueberry Crunch Bark

There's something satisfying about transforming a handful of simple ingredients into a treat that feels special. This Blueberry Vanilla Pistachio Yogurt Bark combines creamy Greek yogurt, fragrant vanilla extract, juicy blueberries, and crunchy pistachios into a frozen snack that's equal parts refreshing and indulgent. Keep a batch in the freezer for those moments when you're craving something sweet, cool, and just a little bit wholesome.
You Will Need
1 (15-ounce) container full-fat Greek yogurt
1 tsp vanilla extract (or ½ teaspoon vanilla bean paste)
1 cup fresh blueberries, plus a few extra for topping
2 packets stevia
Honey, for drizzling
1/4 cup chopped pistachios
Zest of 1/2 lemon
Line an 8x8-inch Pyrex dish with plastic wrap, allowing enough overhang on the sides to easily lift the bark out later.
In a medium bowl, combine the Greek yogurt, vanilla extract, blueberries, and stevia. Stir gently until evenly mixed.
Spread the mixture into the prepared dish, smoothing the top with a spatula.
Scatter a few extra blueberries across the surface.
Drizzle lightly with honey, then sprinkle with the chopped pistachios and lemon zest.
Cover the dish tightly with plastic wrap and place in the freezer for at least 6 hours, or until completely firm.
Remove the dish from the freezer and lift out the bark using the plastic wrap. Peel away the wrap and break into rustic pieces with your hands.
Enjoy immediately or store in a freezer-safe container between layers of parchment paper.
