Creamy Tomato Bisque

There’s something irresistibly comforting about a warm bowl of tomato bisque. This creamy version strikes the perfect balance between rich, velvety texture and bright, fresh tomato flavor. Infused with garlic, fresh basil, and a hint of spice, it’s elevated with a splash of cream and finished with crispy croutons and a sprinkle of Parmesan. Perfect as a starter, a light lunch, or paired with a grilled cheese for the ultimate cozy meal, this bisque is simplicity and elegance in every spoonful.
You will need:
2 tbsp olive oil
1 tbsp butter
4 garlic cloves, minced
1 small onion, diced
1 tbsp tomato paste
1 tbsp butter
1 28 oz can crushed tomatoes
2 cups chicken bone broth
1 tsp salt, or to taste
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional for a little heat)
1/2 cup heavy cream
2 tbsp fresh basil, chopped (plus more for garnish)
Grated Parmesan
Big Croutons or crostini ( store bought or homemade)
In a large pot add olive oil and garlic. Bring heat up to where the garlic sizzles and becomes golden, about 5 minutes. Immediately add onions, cook until soft, another 5 minutes. Add a pinch of red pepper flakes, butter and tomato paste. Stir well until blended, then add tomatoes, broth, season with salt and pepper, and basil. Stir well and simmer for an hour. Turn heat down and add cream, warming through for another 10 minutes.  Serve in bowls with some fresh basil, grated cheese and some croutons or crostini.
