Lowcountry Fish Cakes

It’s a good problem to have, but we have alot of grouper in the freezer! I wanted something different tonight, and I have been craving Maryland style crab cakes. Unfortunately, lump crab meat is going for $50 a pound or more.
This recipe satisfied my craving AND my wallet.
You will need:
1 1/2 lbs grouper
1 egg
1/4 cup mayo
1 cup panko breadcrumbs
1 tsp Old Bay
Butter
Bellas Quick Aioli
Pat the grouper with paper towels, then cut into chunks. Put a few pieces at a time in a food processor. Hit the pulse button a few times to create small, even pieces. Remove to large bowl and continue with the remainder. Once all the fish is chopped, add the egg, mayo, bread crumbs and Old Bay. Mix with your hands until completely blended, then shape into 4 patty’s. I spray my hands with oil to help shape the patty’s. Place in freezer for 20 minutes to firm up
In a large skillet, melt enough butter to generously fill the bottom. Carefully place the fish cakes in the sizzling butter. Cook for 4 minutes on each side, checking to ensure they aren’t burning, you may need to flip a few times during the 8 minutes. Once browned on each side and cooked through, remove to a platter.
Serve with lemon wedges and Bellas Quick Aioli.
