Lowcountry Rice Grits

Rice grits, also known as "middlins" or broken rice, are a by-product of milling Carolina Gold rice, a fragile long-grain rice, and have a creamy, risotto-like texture when cooked. I like to use this as a base for seafood entree’s and this is perfect for people who are gluten free. It’s hearty, but creamy and full of flavor.
You will need:
1/2 cup rice grits
3 cups water
1 tsp butter
1/4 cup 1/2 & 1/2
1/2 cup pimento cheese
Salt and fresh black pepper
Place rice grits and water in a pot with a lid. Bring to a low simmer, cover and stir occasionally for about 30 minutes. Add butter, 1/2 & 1/2 and mix until melted and blended. Remove from stove, toss in pimento cheese and stir until creamy. Salt and pepper to taste. This should give you 4 servings as a side. Need more? Just double the ingredients!
