“No Carb” Lowcountry Boil

As many of you know, my husband is a low carber. Not quite two years in, he is down 45 lbs and he says he feels better than he has in his adult life. Not growing up Italian, he doesn’t miss pasta at all, he uses the Mission wraps for sandwiches and burgers. Zucchini takes the place of potato’s and pasta when needed.
Last nights Lowcountry Boil was actually very good and I didnt miss the carbs at all!
You will need:
Olive oil
1 pack low sodium turkey kielbasa sliced
1 lb peeled and deveined shrimp
1/4 vidalia onion sliced thick
2 garlic cloves
1 cup chicken broth
1 tbsp salted butter
1 1/2 tsp Old Bay
1 large zucchini quartered
In a large skillet ( that has a lid), place a glug of olive oil to cover the bottom. On medium heat, cook the kielbasa stirring until browned. Add the broth ,garlic and onion. Stir, turn down the heat to low, cover and simmer for 20 minutes. In the meantime roast the zucchini in either your airfryer, oven or a quick stir fry on top of the stove.
After 20 minutes, remove the lid and add the butter. Stir until melted then add Old Bay, then the shrimp in an even layer stirring well. Put lid back on and cook shrimp for 5 minutes until pink and cooked through.
Place roasted zucchini in bowls and top with shrimp and sauce mixture, spooning the delicious broth on top. Sprinkle a little more Old Bay on top for garnish.
You will want to serve this with a spoon too, that way you can enjoy every drop of this deliciousness!
