Noni’s Sunday Polpette

These little bites of comfort carry all the love, laughter, and Sunday memories of an Italian kitchen, where the sauce bubbles all afternoon and everyone showed up hungry. Simple ingredients, big flavor, and a whole lot of heart….. is there anything better than hand-rolled meatballs simmered low and slow in rich tomato sauce?

You will need:

1 lb ground sirloin

1 lb ground pork

2 eggs

2 cups of panko bread crumbs

8 garlic cloves

1/2 onion

Big handful of parsley

2 tbsp olive oil

1 cup grated pecorino or Parmesan

Splash of red wine if you have some open ( if you dont open some anyway and you can use this recipe as an excuse to have a glass or two…like you need one )

Salt and pepper

Cooking spray ( I used avocado as it browns nicely, but any kind is fine)

Finely chop the garlic, onion and parsley and put in a large bowl.  Add the eggs, olive oil, salt and pepper.  Mix with a spoon, then add the bread crumbs and grated cheese .  Mix until combined then add the meat.  Using your hands knead everything until fully mixed.

Heat oven to 375.  Line the baking sheets with foil.  Make golf ball size meatballs, spray the cooking on your hands and roll into balls, placing each on on the foil lined pans.   Bake for 30 minutes, turning halfway through baking.

Remove and serve with your favorite sauce.
