Pasta For One

You’ve been craving pasta all day, only to get home and discover the pantry is bare! But before you hop in the car and battle traffic, here’s a better idea—make your own from scratch. It’s faster than you think, and this easy recipe whips up just enough for one generous serving or two lighter plates.
You will need:
1/2 cup “00” flour for extra silkiness
1/2 cup semolina flour for structure
1 large egg
A few drops of olive oil for extra elasticity
On a clean surface or in a small bowl, pile the flour and make a well in the center.
Add the egg and oil.
Using a fork, gently whisk the egg, slowly pulling flour in from the sides until it becomes a shaggy dough.
Knead with your hands for 8–10 minutes until smooth and elastic.
If sticky, dust lightly with flour; if dry, add a few drops of water.
Wrap in plastic wrap (or cover with a bowl) and rest at least 30 minutes at room temp.
Roll out with a rolling pin until very thin (about 1–2 mm).
Cut into strips or leave as a sheet and add filling for ravioli
Boil in well-salted water for 2–3 minutes until just tender.
Toss with your sauce of choice immediately.
