Sicilian Seared Tuna

I do love tuna prepared with an Asian twist, but I will be honest, I didn’t have the stuff to do it after getting some beautiful fresh tuna at the fish market. I didn’t feel like going back out. Of course I always have garlic, lemon, olive oil and parsley around, so I decided to give it a southern Italian twist. Wow this was amazing, not sure I will make it any other way after this! This was so fresh and vibrant, perfect for a warm spring day with a glass of crisp white wine.
You will need:
1/2 lb fresh tuna steak
1 lemon ( juice and zest)
2 cloves of garlic, minced
2 tbsp olive oil
Handful of chopped parsley
Salt and pepper to taste
Take tuna out of fridge and allow to sit about 15-20 minutes to remove the chill. Pat it dry, rub each side with olive oil, generously salt and pepper. In the meantime, combine olive oil, juice of 1/2 lemon, a pinch of salt/ pepper and parsley.
Using a good skillet, heat it to medium high. Place the tuna steak in hot pan, sear 2 minutes each side. Remove to a plate and allow to rest for 10 minutes. Slice against the grain, plate, drizzle with lemon mixture, then finish with freshly zested lemon.
