Zucchini Parmesan with Burrata

When you are craving a Parmesan dish of some sort, but want it fast, fresh and delicious, this zucchini dish is both comforting and sexy at the same time!
You will need:
2 large zucchinis cut into quarters, then roughly diced
Olive oil
Salt and pepper
2 cups marinara
Grated Parmesan
Burrata ( room temp)
Fresh basil
Place the zucchini on a large baking sheet, toss with olive oil, salt and pepper. Spread out as much as possible, then roast in a 400 degree oven until light brown but not mushy, about 10 minutes.
Mix the zucchini with the marinara and place in a 8x8 casserole dish . Cover the entire top with grated cheese. Place back in oven at 350 degrees, bake for 30 minutes until bubbling and cheese is slightly browned. If you see the cheese getting too brown, cover loosely with foil. Remove from oven and serve with fresh burrata.
