This was absolutely delicious. It combines our beloved summer tomatoes, basil and mozzarella into a hearty but healthy meal. I served this over spaghetti squash drizzled my homemade basil oil.
You will need:
4 chicken breasts lightly pounded and brined ( see brine recipe from weekend, its also up on my website)
2 medium tomatoes sliced into 4 pieces each, salted
1 medium mozzarella ball sliced 8 pieces
Handful of basil torn
Olive oil
Preheat oven to 250. After the chicken brines for 30 minutes, pat dry and lightly brush with olive oil, salt and pepper. Grill on high heat 400+ degrees for 5 minutes each side with the lid closed. Remove to a plate. Place tomatoes on a grill pan with holes, drizzle with olive oil and place on grill for 5 minutes with lid closed. You want them just to roast a bit, receiving some of that good smoke flavor. Remove from grill. In a large round serving dish, layer the chicken and tomatoes. Top with mozzarella and place in oven until the cheese gets just a little melty. Remove and drizzle a little olive oil , then top with the torn basil.
