Pimento cheese is a big deal in the south and I love it! In our area, we have many to choose from. A few of the local restaurants and markets make and sell their own version. Dukes is made in upstate South Carolina, but Palmetto Cheese is made right here on Pawleys Island. We also have access to the freshest shrimp there is, so I made a fabulous spread out of the two.
You will need:
1 container of pimento cheese
1/4 lb cooked shrimp ( I broil mine in the air fryer for about 3 minutes then cut it into pieces)
1 Tsp Old Bay
Ritz or Townhouse crackers
Mix the shrimp, pimento cheese, and Old Bay in a microwave-safe bowl. Microwave for 30 seconds, stir, then another 30 seconds. You want it warmed but not totally melted. Serve with buttery crackers.
