Don't Let Fig Season Slip Away

Every summer it happens.

One day your fig tree has a handful of fruit, and before you know it, branches are bending under the weight of perfectly ripe figs. Suddenly everyone is picking frantically, sharing baskets with neighbors, making preserves, baking cakes, and wondering how in the world they'll use them all before they're gone.

The truth is, fresh figs don't wait.

Unlike apples or peaches, ripe figs are incredibly delicate. They bruise easily, spoil quickly, and reach their peak for only a few precious days. That's part of what makes them so special. They remind us that some of life's greatest pleasures aren't meant to last forever.

If you're lucky enough to have a basket of ripe figs on your counter, here's how to give yourself a few extra days to enjoy them.

How to Store Fresh Ripe Figs

  • Don't wash them until you're ready to use them. Moisture is the enemy and encourages mold.

  • Line a shallow container or plate with paper towels.

  • Arrange the figs in a single layer so they aren't piled on top of one another.

  • Cover loosely or use a container with the lid slightly ajar so they can breathe.

  • Refrigerate them immediately.

Properly stored, perfectly ripe figs will usually keep for 2–3 days, while slightly firmer figs may last 4–5 days.

When you're ready to enjoy them, let them come to room temperature for about 30 minutes. Their sweetness and aroma truly come alive.

Use the Softest Ones First

Each morning, take a quick look through your figs. The ones beginning to soften or split are often the sweetest. Those are the ones destined for a warm flatbread with feta and hot honey, a rustic olive oil cake, roasted chicken with rosemary and lemon, homemade preserves, or simply enjoyed with a piece of good Italian cheese.

Nothing needs to go to waste.

A Little Reminder from Nature

One of the things I love most about cooking seasonally is that it teaches us not to rush….but also not to wait.

Fig season asks us to pay attention. To gather around the kitchen. To share with friends. To fill the house with the scent of something baking. To preserve a little for later while enjoying as much as we can today.

Before long, tomatoes will fade, basil will slow, and another season will take their place.

Until then, pick the figs. Fill the baskets. Share them generously. And remember that some of the sweetest moments in life, just like fresh figs, are all the more beautiful because they don't last forever.
