Fagiolini e Patate

Fresh, colorful and healthy this hearty side dish just screams farm to table. Dressed simply with good olive oil, garlic, fresh lemon juice, salt and pepper and a bit of fresh basil, you will love this so much you will make it again and again.
You will need:
1 lb new potatoes
2 garlic cloves, minced
1 package fresh whole green beans
Olive oil probably 1/3 of a cup or more
Salt and pepper
Juice of one large lemon
Several leaves of basil torn
Boil a large pot of water and add potatoes. They will need 15-20 minutes to cook, once you can easily stick a knife through remove them to a bowl. In the same water add the green beans. While the green beans cook, they only need about 5 minutes, slice the potato’s with a knife in large chunks ( just do this in the bowl). Drizzle with lemon juice while hot, then sprinkle with salt and pepper and toss . Remove the green beans with slotted spoon and add straight to the potatoes. Drizzle with a lot of olive oil and toss. The potatoes will absorb a lot of the oil so add more if needed. Toss again then add the torn basil. Let sit a while and serve at room temperature.
