I could eat this in a bowl all by itself. It’s creamy and decadent. It’s also the perfect foundation for a saucy meat dish.
You will need:
4 cups new potato’s cut in half
1 tbsp butter
2 tbsp mascarpone
1/2 cup grated pecorino
1 tsp granulated garlic
1 tbsp chopped parsley
Fresh black pepper
Cook the potatoes in water until fork tender. Drain but save a half cup of potato water
In a bowl smash potato’s with a masher, add all the ingredients and stir. Add a bit of pasta water and continue to mix until creamy. There will be some lumps and of course the skin from the potato’s.
