Mediterranean Salad

It’s time to lighten things up people!  This is just fresh, colorful, crunchy and good.  You can eat this alone or add some seared shrimp, a can of tuna or some shredded salmon! The mint just adds a wonderful flavor profile!



You will need:

Can of chickpeas, drained and rinsed

4 Persian cucumbers quartered

1/2 small red onion or 1/4 of large chopped

1/2 cup crumbled feta ( buy the block, crumble your own)

Squeeze of fresh lemon juice ( tsp-ish)

2 tbsp minced parsley

2 tbsp minced mint

Really good olive oil

Salt and pepper


Mix everything together and chill before serving.
