Minty Mediterranean Salad

This was made popular by a celebrity ( shes very “Friend-ly). However I would eat it without her endorsement because it’s pretty tasty and full of healthy ingredients.

Eating a Mediterranean style diet is highly recommended as one of the healthiest eating plans by American nutrition experts. It's also recognized by the World Health Organization as a healthy-eating pattern.  It consists of mostly plant-based foods such as fruits and vegetables, whole grains, and legumes.  The Mediterranean diet can reduce the risk of a host of diseases, from cancer to diabetes. The anti-inflammatory benefits of these ingredients can also keep your immune system strong and prevent colds and other illnesses.



You will need:


Salad~

2 packages precooked brown rice, quinioa or blend

2-3 chopped Persian cucumbers

1/2 cup chopped parsley

1/2 cup chopped mint

1/2 cup chopped red onion

1/2 cup chopped pistachios lightly crushed ( use sandwich bag)

1 (15oz) can chickpeas, drained and rinsed (can also baked in the oven or air fried for some extra crunch)

1/2 cup crumbled feta


Vinaigrette~

Juice of 1 lemon

1/4 cup extra virgin olive oil

Salt & pepper

2 garlic cloves grated

1 tsp lemon zest



Make vinaigrette by mixing olive oil, lemon, garlic, salt, pepper and zest in a bowl and set aside.

Cook quinoa according to directions, allow to cool. Place all salad ingredients in a large bowl, to with vinaigrette and lightly toss.
