Ok let’s get this out of the way first. Yes I know that Alfredo sauce is not a traditional Italian dish. However it’s pure comfort food. And this is what my granddaughter wants to make for her birthday meal tonight. Any time I can spend with her in the kitchen, I will take it!
You will need:
1/2 cup butter
1 pint whipping cream
8.8 oz container of mascarpone
2 garlic cloves finely minced ( I grate mine)
1 1/2 cups grated Parmesan or pecorino
Salt and pepper to taste
1 lb fettuccini
In a wide saucepan, add butter, heavy whipping cream, and mascarpone. Cook over medium heat and whisk until melted. Add minced garlic and pepper, continue to whisk until blended and smooth, watching that it does not boil. Add grated cheese, cook on low simmer until cheese is blended and everything is creamy and thickens, atleast 20-30 minutes, whisking often. Taste and add salt if needed, I don’t add salt.
Boil fettuccini until al dente and drain well. Add to sauce, stir until all pasta is coated. When serving add more black pepper and cheese if desired.
