Not Your Mothers Salmon Patties

Its that time Y’all! Time to lighten it up a bit and guess what? I have some delicious recipes lined up for January that are really tasty and healthy. Let’s start with this one, thats easy!
1 can Live Ocean salmon drained and flaked
1 tbsp Dijon mustard
1 tsp garlic powder
1 egg beaten
1/2 cup Italian bread crumbs
1 tbsp capers
1/2 lemon
1 tbsp olive oil
Mix the salmon mustard, garlic powder, egg and bread crumbs together well. Form two patties. Heat olive oil in pan and once hot, sear the patties 5 minutes on each side. Remove from pan and add the capers in and quickly crisp them up. Plate your patties over lettuce, top with capers, fresh squeezed lemon juice and another drizzle of olive oil. I dont put salt and pepper in the patties because the breadcrumbs are seasoned already.
