Pure summer in a bowl, it’s a great side dish when grilling out, and always a hit when you bring to someone else’s home as a side dish.
You will need:
1 nice size ripe tomato
1/2 red onion coarsely chopped
1/2 red bell pepper coarsely chopped
1 medium Kirby or 1/2 English cucumber quartered and sliced
1 cup cubed Buffalo mozzarella
1 cup cubed toasted bread
A few fresh basil leaves torn
1/4 cup olive oil
1/4 cup white wine vinegar
Salt and pepper to taste
Mix the olive oil, vinegar,salt and pepper in a bowl and set aside.
In a large bowl mix all the veggies, bread and cheese together.
Add the dressing and basil leaves and toss until evenly coated.
Chill for an hour or so. You can always toss in some grated pecorino romano if you dont use the mozzarella. Well shoot, you can even if you do, I mean who doesn’t love a bunch of cheese? Watching your carbs? Omit the bread. Just promise me one thing, and that is that you use good olive oil, that makes all the difference.
