Shrimp is the most popular seafood, and I truly think that South Carolina shrimp is the sweetest there is. Cold boiled shrimp is always a hit and its healthy, but so many people over cook it. If you follow these directions, you will never make shrimp any other way again. I swear I could eat this every day of my life!
You will need:
1 lb peeled and deveined shrimp ( you can purchase already P&D for a few bucks more)
6 cups boiling water
Bowl of ice with water
1/2 cup heinz ketchup
1 tsp horseradish ( more if you like it spicier like I do)
Lemon cut in quarters
Mix the ketchup, horseradish and a squeeze of lemon in a small bowl and set in fridge.
Place the shrimp in boiling water and boil until pink, 3 minutes TOPS! Remove with slotted spoon and place directly into ice bath to stop the cooking. Let sit in water until cool, drain, then place in fridge for another hour.
Serve on a platter with the cocktail sauce.
