Pot de Crème Pistache

Recently I decided to purchase pistachio creme because I have seen it on many blogs lately, mostly in pastry.  Believe it or not, I don’t recall ever tasting this. Curious as I am, I bought some on Amazon, as well as the lady fingers and made this luscious dessert.  This recipe makes two servings in martini or coupe glasses, but honestly you can get 4 servings of out this and put them in little cordial glasses for just a lil bite.  As far as the liqueur,  just get a mini bottle at the store if you don’t think you will ever use it again.  Don’t want alcohol?  Drizzle lightly with some leftover coffee. My neighbor and taste tester, helped me name it. This would be fun for St Pattys Day because of the green color!


You will need:


4 lady fingers

Cointreau

1 tbsp pistachio cream

1 tbsp softened mascarpone

1 tbsp full fat Greek yogurt

Shelled pistachios


In a medium bowl, using a hand mixer, blend the pistachio cream, mascarpone and yogurt together.   Crumble 2 lady fingers each in the martini glasses.  Drizzle with a little Cointreau and let it seep into the lady fingers for about 10 minutes.  Spoon the creme over the lady fingers and top with a sprinkle of pistachios.
