Salmon With Prosecco Sauce

OH wow, just WOW. This one was really good and I think you will like it. Great flavors, and not a heavy meal. Easy and quick week night meal!


You will need:

1 lb salmon cut in 2 pieces.

1 tbsp olive oil

1/2 Prosecco

1 tbsp Dijon mustard

1 tbsp finely minced shallot

1 tsp capers

Parsley for garnish

Salt and pepper


Remove salmon from fridge and allow to sit out for 15 minutes. Salt and pepper each side. Add olive oil to hot skillet, and place salmon skin side UP. After 5 minutes turn over, the flesh should have a good sear. Cook another 5 minutes and remove to a place. In the same oil, add shallot, stirring quickly so they don’t burn. Add mustard and stir until creamy and blended with oil. Add capers and Prosecco and simmer until sauce thickens, 3-5 minutes. Place salmon back in skin side up and let simmer for 1 minutes, turning over and simmering another minutes.

Serve spooning the sauce over each salmon filet.
