A few months ago, I embarked on my sourdough journey, and I’ve been experimenting with every method and recipe I can get my hands on. My starter, now three months old, has been a constant companion…..bubbly, feisty, and full of personality. After lots of trial and error, I finally landed on a same-day sourdough recipe that works beautifully. No long overnight waits, no complicated timings; just a simple, reliable method that gives you a gorgeous, crusty loaf by evening.
Whether you’re new to sourdough or like me, still exploring the magic of your starter, this recipe is approachable, forgiving, and delicious.
🥖 SAME-DAY SOURDOUGH
⏱️ 8 hours total🍞 Makes 1 loaf
INGREDIENTS
• ½ cup active sourdough starter
• 1½ cups warm water
• 4 cups organic bread flour
• 1¾ tsp salt
INSTRUCTIONS
MIX (8:00 AM) Stir starter + water.Add flour + salt.Mix until no dry flour.Cover, rest 20–30 min.
BULK FERMENT (8:30–11:30 AM)Stretch & fold every 30 min (3x).Keep warm.Dough should puff ~50% and jiggle.
SHAPE (12:00 PM) Shape into round.Rest 15 min.Shape again.Place seam-side up in floured bowl.
FINAL PROOF (12:30–3:30 PM)Cover, room temp.Finger poke springs back slowly.
BAKE (4:00 PM)Preheat oven + Dutch oven to 475°F (30 min).Score dough.Bake 20 min covered.Uncover, lower to 450°F, bake 20–25 min.
COOL Rest 1 hour before slicing.
✨ Notes:• Faster rise: use ⅔ cup starter
• If sticky, add 1–2 tbsp flour during first fold
