Sausage Zucchini Soup

It’s so easy to whip up some soup for lunch, especially if you work from home. I always have staples in my pantry or freezer, and trust me, everything good starts with olive oil and garlic. From there its a blank slate!

You will need:

Olive oil

2 garlic cloves minced

Pink of red pepper flakes

1/2 sweet onion chopped

2 Italian sausage links casing removed

3 zucchini’s sliced in quarters

3 cups water

3 cups Passata or tomato sauce

Salt and pepper

Chopped basil

Grated Pecorino


Heat olive oil in large pot, add garlic and cook until toasty. Add onions and red pepper flakes cooking for 10 minutes until soft. From there add sausage breaking up into small pieces until fully cooked. Add water and tomato sauce, cover and simmer for 1 hour. Add zucchini, salt and pepper stir and cover. Simmer for another 30 minutes.

Ladle into bowls topping with fresh basil and grated cheese. A big hunk of crusty bread is a must!
