Sorrento Shrimp


Ok this is really a sheet pan shrimp, but doesn’t Sorrento Shrimp just sound sexier? With the lemon, fresh shrimp, garlic and olive oil in the recipe, it really is something you would have on the Amalfi Coast. You can do so much with this. Serve it over hot pasta, risotto, or on toasted ciabatta! I drizzled with a little of the chili oil I made recently, LORDIE!!


You will need:

1/4 cup melted butter

1/4 cup olive oil

4 garlic garlic cloves minced

1 tbsp freshly squeezed lemon juice

1 1/2 lbs peeled and deveined shrimp

Salt and pepper to tast

2 tbsp chopped fresh basil

Sliced lemons for garnish


Preheat oven to 400 degrees. Spray a baking sheet with cooking spray. In a bowl, mix butter, olive oil, lemon juice, salt and pepper. Place shrimp in a single layer onto the prepared baking sheet. Stir in butter mixture and gently toss to combine. Place into oven and bake just until pink, firm and cooked through, about 8-10 minutes. Garnish with lemon and basil. Serve immediately.
