So excited for my trip to Paris, so I decided to make something this weekend that I know I will eat several times while there. Steak frites is a classic French dish consisting of a pan-seared or grilled steak that is served up with French fries. The idea behind it is that you would use the fries to dip into the steak juices that are on the plate. I made a delicious Dijon sauce that knocked my chaussettes off!!
You will need ( per 2 servings):
1 lb NY Strip Steak
4 Yukon Gold potatoes
1 garlic clove
1 tbsp butter
1 tsp Dijon mustard
Splash of white wine
Pinch of minced parsley
Salt and Pepper
Start by cutting the potato’s into 1/2 inch sticks. Then soak them in salted water for 30 minutes. Remove, dry thoroughly and toss in a bowl with olive oil.
Heat oven to 400 degrees. Remove steak from fridge and let sit for 15 minutes. Place potato’s on baking sheet, salt and pepper generously, then put in oven. Heat a cast iron skillet, salt and pepper each side of steak. Add butter to pan. Once bubbling, sear steak about 4 minutes each side. Remove and cover with foil. In the same skillet, grate the garlic clove into the pan juices being careful not to burn the garlic. Stir immediately adding the mustard and wine. Continue to stir and let simmer on low. Dont forget to tend to those potatoes, stirring them mid way for even cooking. Total cooking time on the potatoes should be 20 minutes. Remove potatoes from oven. Slice steak and plate with the crispy potatoes, and drizzle the Dijon sauce over the steak. But most definately dip those potatoes in the sauce!
