Sweet and Spicy Bruschetta


There are so many flavors going on, I cant even describe it. Its really an appetizer but I made a meal out of this tonight since it was just me. You can choose your own variations on this, but the final outcome will rock your world.



You will need:

2 cups small tomatoes

2 tbsp mascarpone softened

4 roasted garlic cloves

2 tbsp olive oil

Basil leaves

2 tbsp Honey or Agave

1 tsp red pepper flakes OR a tbsp of Calabrian chilis OR you can just purchase hot honey

1/2 Loaf of french bread


Roast tomatoes with a 1 tbsp olive oil and sea salt. Here is the great thing, you can do it anyway you want. In the oven or on the stove top, you just want them soft. Set aside and let cool.


Mix mascarpone, olive oil and roasted garlic until blended. Set aside.


Mix honey or agave with chili flakes or Calabrian chilis. If you have purchased hot honey, skip this step.


Slice your bread on a bias. Brush each side with a little olive oil. You can grill on your gas grill, in a grill pan on your stove, or just bake them until nicely toasted. Another choice you have to make it easier.

Spoon the mascarpone mixture on the grilled bread. Place a few tomatoes on top, drizzle with the hot honey, and top with a bit of the chopped basil.
