Different names and different cultures, all three are vegetable mixtures used as a base for cooking. The key difference lies in their ingredients.
Mirepoix is a French combination of onions, carrots, and celery.
Sofritto is a Spanish blend with onions, tomatoes, bell peppers, and often garlic.
Trinity, or Holy Trinity, is the Cajun version that replaces carrots with bell peppers, using onions, celery, and green bell pepper; essentially, the trinity is a variation of mirepoix adapted with different vegetables based on regional availability.
The aroma of all of this cooking, brings me to my knees! You can add any of these to uncooked to stocks and broths for a light flavor. To add richness to stews and braises, "sweat" the vegetables by cooking them in a little oil or butter over low heat until they release their juices.
