Watermelon Salad

This is such a fresh and colorful salad to enjoy with grilled meats on a hot summer day. The key is to use fresh ripe watermelon. The flavor profiles just hit, the sweetness of the watermelon, the salty feta and pungent extra virgin olive oil work magic together!! The measurements below make enough for 4 people.


You will need:

4 cups cubed ripe seedless watermelon

1 tablespoon extra virgin olive oil ( use the good stuff)

2 ounces feta cheese, crumbled. (Get a real block of Greek feta, the pre crumbled are tasteless)

A few thin slices of red onion

6 basil leaves sliced

Pinch of kosher salt

Fresh ground black pepper


Arrange watermelon and onion on a platter.Sprinkle with feta crumbles and basil. Drizzle with olive oil then sprinkle with salt and fresh cracked black pepper.
