White Bean Dip

This is so good, you will want to lick the bowl!  In addition, it’s good for you!  This appetizer can make a light meal for sure, add a glass of crisp white wine, and you wont want anything else.


You will need

1/4 cup olive oil

1 garlic clove minced

1 can cannellini beans drained and rinsed

1 tbsp fresh lemon juice

1 tbsp rosemary minced

1/2 tsp sea salt ( add more to taste)

1/2 tsp black pepper


Place olive oil in hot skillet, add garlic cloves and cook until just light brown. Remove from heat, pour into a bowl and allow to cool for 20 minutes.  Add beans, garlic/olive oil, rosemary, salt and pepper to a food processor pulse until smooth and creamy.

Spoon into a bowl, drizzle with a little more olive oil. Serve with crostini, crudités and/or pita chips.
