Zucchini alla Noni

When Zucchini alla Norma meets Zucchini alla Scapece, delicious things are bound to happen! These two beloved Italian classics finally crossed paths in my kitchen and gave rise to a brand new family favorite: Zucchini alla Noni. (Which is really just a fancy way of saying... I made this one up!) But honestly, aren’t those made-up recipes often the best? I took this dish to a family BBQ and it was a total hit!
You will need:
Two large zucchini
1/3 cup olive oil
1/3 cup white wine vinegar
4 whole garlic cloves
Salt and pepper
Handful of pistachios
Handful of torn basil leaves
Pecorino Romano
Heat a stove top grill pan, get it hot. Slice the zucchini into 1/4 inch circles. Spray each side with cooking spray and place on hot grill pan. Sear each side for about 2 -3 minutes until you see grill marks and the zucchini is cooked but not mushy. Place into a bowl with olive oil and vinegar salt and pepper. Stir gently be careful not to break the zucchini. In the same hot grill pan toss on garlic cloves and stir until a little charred and add to zucchini mixture. Place into fridge over night. Serve on a platter with sides, top with crushed pistachios, torn basil and shaved pecorino.
