Bistecca alla Fiorentina

Not all Italian food is pasta! The bistecca alla fiorentina (beefsteak Florentine style) is an Italian Steak made of young steer that, combined with the specific preparation, makes it one of the most popular dishes of Tuscan cuisine. In America, this would be known as a T-Bone. It’s one large cut of meat, grilled, then cut into servings. When my friend and I were in Firenze ( Florence Italy) in December of 2021, we must have had this 3 times in the week we were there.


You will need:

2-3 lb bone in T-Bone steak

Olive oil

Kosher Salt

Let meat sit out for atleast 30 minutes before grilling. Get your grill hot, 500 degrees! Baste the steak with olive oil and sprinkle with kosher salt on both sides.

Place the steak on the hot grill grates, close lid. For the perfect medium-rare 2 inch thick steak, cook for 20 minutes, turning over halfway. A meat thermometer should read 130°F. I will tell you they eat it pretty rare over there. And you get it how you get it. If you eat your steak medium well to well, then dont bother! Remove from grill, and allow to sit for 10 minutes. Cut the meat as close to the bone as you can, then cut into individual thick slices.
