Cilantro Lime Gold Rice

Carolina Gold Rice is so versatile. The variety is named for its dazzling color in field and is famous for its cooking qualities, aroma, flavor, and texture. The addition of the cilantro and lime make this already delicious rice more vibrant and zesty.


You will need:

1 cup Carolina Gold Rice

1 1/2 cup water

1/4 cup chopped cilantro

1/2 cup finely chopped vidalia onion

Juice of half a lime


Bring water and rice to a boil, turn down and cover simmering for 15 minutes.   Remove from heat but do not take lid off.  Let sit for 15 minutes covered.   Remove lid, add cilantro, lime juice and onion, fluff with fork.   I used this as a base for a Poke Bowl so I did not add butter.  Honestly the starch gives it such flavor I don’t think butter is needed, BUT if would certainly compliment this.  I loved this and would absolutely eat this with grilled fish or chicken.
