Gnocchi Cacio e Pepe

I have no issue using pre made ingredients to save time, especially if the dish turns out amazing like this did!  I served with pan seared pork chops topped with sliced hot cherry peppers.  So good!!


You will need:


Olive oil

1 16 oz package of premade gnocchi

1 cup hot water

1 cup grated pecorino

Black pepper, big pinch



In a large,hot skillet, add a glug of olive oil to coat the bottom.  When oil is shimmering, add the gnocchi, stirring constantly to ensure all sides get toasty.  After 5 or so minutes add the hot water, bring to a boil, and let simmer for 5 minutes.  Sprinkle the cheese evenly over the gnocchi and water, stirring to blend completely, add a big pinch of black pepper and stir well.  In this recipe, you want more black pepper than you would usually add to a dish, because it’s the “Pepe” part of the recipe!


Serve immediately, topping with more cheese and pepper if desired.
